Pineapple Fried Rice

Pineapple Fried Rice

 

1 onion

1 large carrot

2 garlic cloves, minced

1/2 cup frozen peas

1/2 cup roasted cashews

Plus extra to serve

250g extra firm tofu, diced

2 tsp curry powder

1/2 tsp ground turmeric 

1/2 tsp ground black pepper

3 cups cooked white rice

1 cup fresh pineapple chunks

2 green onions, thinly sliced

2 tbsp soy sauce

 

  1. Heat non stick fry pan. Sauté onions, carrot and garlic until soft.
  2. Add peas, cashews and tofu fry for 2 mins.
  3. Stir through curry powder, turmeric and pepper for about 30 secs.
  4. Add cooked rice, pineapple and green onion and stir fry till rice has broken down and spices evenly coated.
  5. Add soy sauce and fold through rice mixture.
  6. Serve fried rice topped with extra cashews and green onions.
